Easy Homemade Blueberry “Ice Cream”

This easy homemade blueberry ice cream is really made with bananas and coconut milk. I’ve been trying to cut refined sugar from my eating, but I still want something sweet and cold in the summer. Okay, fine, I even like ice cream when it’s -20 degrees. This quick recipe is my go-to dessert. The best part is that it’s ready to eat immediately!

First! Don’t toss those over-ripe bananas. Peel them and put them in an airtight container in your freezer. If you want, you can break them into smaller pieces before freezing. Even when frozen they are easy to break into smaller pieces though. When you’re ready for “ice cream” this is the recipe.

Now, there are many variations on this recipe that you can use. I’m only going to list the blueberry version.

One more thing. I’ve tried this recipe in a blender, a Nutribullet, and a food processor, and I can say without a doubt that the food processor is the best appliance for the job.


2 large frozen bananas (peeled)

1 C frozen blueberries

1/3  coconut milk

Sweetener to taste (I don’t add any sweetener because this is plenty sweet already)


Break bananas into smaller pieces, about 2-3 inches and add to food processor. Add blueberries. Pulse the food processor a few times to get the ingredients moving, then switch to blend for about 30 seconds. Open the processing bowl and scrape the sides with a spatula, then blend for another 30 seconds. This will give you a granular looking purple mixture. Now add coconut milk a little at a time while the processor continues to blend. You may need to scrape the sides with a spatula again. Continue to add coconut milk until you see a consistency of ice cream starting to form. Don’t add too much coconut milk or you’ll have a smoothie. Use the spatula to scrape the sides again and make sure it’s blended well. Scrape into serving bowls to serve immediately.

This makes about 2 1/2 cups of ice cream. You can freeze unused portions in an airtight container, but you’ll need to allow to thaw for about 5-10 minutes if you do this.

If you don’t have a food processor, Amazon has a nice one that’s inexpensive and gets the job done.
